Sweets for my sweet, sugar for my honey. Greek yogurt and honey cupcakes are truly divine, full of protein and sweetened with honey instead of processed sugar, they also contain whole grain flour giving you a boost of B vitamins and coconut oil instead of butter, which helps to rev up your metabolism.
- Half a cup (small cup) of clear runny honey (plus extra for topping)
- 1/3 of a cup of coconut oil melted
- 2 fresh free range eggs
- 1/4 of a cup of thick and creamy Greek yogurt, I used Total fage
- 1 tsp of vanilla extract
- One and half cups of brown rice flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Greek yogurt for topping
1.In a medium-sized mixing bowl, mix honey and melted coconut oil together.
2.Beat in eggs, one at a time.
3.Stir in vanilla and Greek yogurt.
4.In another medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
5.Slowly mix the flour mixture into the honey mixture until smooth.
6.Fill cupcake liners 3/4 full.
7.Bake at 180 C for 20 minutes or until a toothpick comes out dry and cakes are golden brown.
8.Allow cupcakes to cool.
9.Just before serving, top with Greek yogurt and drizzle with honey.
