Roasted Tomato and garlic soup

Baby it’s cold outside, warm up with this delicious roasted tomato soup.

Full of goodness, garlic is anti viral and will help to fight off winter colds.

Preparation time 10 minutes
Cooking time around 20 minutes


  • 1 pack cherry tomatoes for roasting
  • 2 cloves of garlic
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • handful of basil
  • 750ml of bouillon vegetable stock


  1. Drizzle olive oil onto the tomatoes and garlic and roast for 30 minutes
  2. Make vegetable stock
  3. Once cooled, squeeze the garlic from the cloves
  4. Blend all ingredients to a purée
  5. Reheat and add créme fraiche to taste for a creamy finish

Serve piping hot with chunky wholemeal bread and olive oil.
