Healthy blueberry and flaxseed pancakes

Pancakes can be eaten as a healthy breakfast when made from wholewheat flour with ground flaxseeds to improve digestion and provide B vitamins for sustainable energy throughout the day.

Preparation time: 5 minutes

Cooking time 6-8 minutes

  • 3/4 cup wholewheat flour
  • ¼ cup ground flaxseed
  • 1 tea spoon stevia
  • 2 tablespoon baking powder
  • 1 cup fresh or thawed frozen berries
  • ¼ teas spoon salt
  • 1 beaten egg
  • 1 cup milk of your choice
  • 2 tablespoons of extra virgin olive oil
  1. Mix together dry ingredients
  2. In a different bowl mix together wet ingredients
  3. Add wet ingredients to dry ingredients and stir till moist
  4. Let sit for a few minutes
  5. Sprinkle with blueberries
  6. cook over a medium heat
  7. Turn when surfaces are bubbly and edges start to dry
  8. Serve straight away and enjoy!
